I've been using a GPT disk in my laptop for quite a while, F12 at
least, dual-booting with Mac OS X and set up with native GPT support
in F12 (am now at F14).

The partitions on the internal disk show up in Dolphin, and have ever
since F12.

For fdisk-like usage but for GPT grab gdisk.
