Fedora Copr builders updated to Fedora 41

Hello maintainers,

Fedora Copr builders were moved from F39 to F41.  There's one known
change that might cause troubles - the pyp2spec on F41 has some
PEP 625 related changes, potentially failing your pyp2spec builds.

The good news: This update brings the possibility to do "declarative
builds", on F39 this was not possible:
