How about we globally set:
%global _changelog_trimtime %(date +%s -d "1 year ago")
(or 6 months or whatever).
It should be combination of time and number changelog entries. But the
latter is not supported by RPM I am afraid :/

Then git still has the full changelog for anyone that cares, but all
the rpms have a trimmed changelog.
