TBH it looks like your Java bindings should build fine on Java 11

You're right - I checked just now using:
java-11-openjdk-headless-11.0.11.0.9-4.fc35.x86_64
javapackages-filesystem-6.0.0-1.fc35.noarch
javapackages-tools-6.0.0-1.fc35.noarch
Tests pass too.
The bug above is a bit worrying though. I don't think anyone ever
tried to address those issues. I don't know enough to say if they're
real or nice to haves, but they seem serious.
BTW another project that would be fun for Java bindings (none exist
presently) is nbdkit
