Well /etc/mock/site-defaults.cfg says this (wrongly I believe):
# By default Mock use simple chroot(1). When you set this to True
# it will use systemd-nspawn(1)

It appears the default was changed at some point but site-defaults.cfg
verbiage never updated.
It should probably be updated in mock but you can change the default
in /etc/mock/epel-5-{i386,x86_64}.cfg
