Hi there,

Welcome aboard.

I personally prefer to use perldoc for manpages because it is particularly easy to write and format (and then I submit it in whatever format the project wants).

If you are looking for manpages to write here is a simple query:
https://bugzilla.redhat.com/buglist.cgi?query_format=specific&order=relevance+desc&bug_status=__open__&product=Fedora&content=man+page

That list might look a little daunting but there should be an application that interests you there.
