I haven't been following the submissions too closely, so apologies if this is already a thing, but, if there isn't already a lightning talks session, you can add one, and encourage late submitters to apply there? That would also allow taking on-site submissions, and last minute additions too if you have really interesting things coming in during the conference.

Yes, you'll need a moderator/MC day of, but your existing selection committee could use it as overflow and help review in the future maybe?
