You can forward incoming emails using .forward files and for reporting use any of the sendmail log analyzers:

Just wondering how your subscribers are going to connect. Which DSLAM do you plan to use ?
2.????? Is it possible to setup user email address to forward send/receive
mails to another user. For instance, If user@domain.com is sending mails to outside, I want to forward to user2@domain.com even though if he is not copied when user mail.
You can do that using postfix and the "sender_bcc" and "recipient_bcc" parameters.
3.????? I wanted to take reports for each email address like Email
address, sender, receiver, date, Subject and header.
postfix-pflogsumm should be able to generate most of the reports from the mail logs but for Subject and Header you will need to do some tweaking. Usually this information is not logged.
