I have a laptop running Fedora 41, it has 2 internal SSD drives,
one has the root and boot partitions and the second is entirely a mount point at /data
However with Fedora 42 when I click on the installation destination it only sees one drive

From the live usb run `lsblk -f` does it list both disks and all the partitions?

BIOS RAID option; if Intel RST/RAID is enabled (instead of AHCI) then the install may not see all drives
