So I have 2 gigs of ram.... I have been running Kubuntu 12.04 and I am wanting to try Fedora.
Should I try XFCE or stick with KDE?
Really havent had too many issues with KDE memory wise besides AKONDI eating memory when KMAIL isnt open. but other than that thanks to KSPLICE ive had 21, 22 consecutive uptime without a reboot.

For testing stuff, I run KDE in a VM allocated with 1.5G of memory. No problems memory wise for what I use it.
Assuming you have the disk space, install both of them and then move to the one that suits your needs. On my "work" machine I've got a few Desktop Environments installed and when I have some troubles with KDE I switch to GNOME and I'm quickly happy with KDE again. :-) :-)
One thing that *may* be of value to you is to run a KDE desktop but use lightdm as the Display Manager. Not something I've tried....but lightdm may use less memory than kdm. Again, I'm just speculating.

The only time I reboot my system is when the kernel is updated.

Really not relevant. For one thing kdm is very small (check ps) and for another the display manager spends 99.999% of its time just sitting there waiting for the user to log out. IMHO switching to lightdm is not going to make any measurable difference.

You already answered your own question. :-)
Akonadi is something of a memory-eater, so if that is an issue, you could try some other mail client, but otherwise KDE should be fine.
