You would simply add something like:

desktop-file-install --vendor fedora --delete-original	\
  --dir $RPM_BUILD_ROOT%{_datadir}/applications   	\
  --add-category X-Fedora			        \
  $RPM_BUILD_ROOT%{_datadir}/applications/%{name}.desktop

to the install section of your spec file.
