I think this might have been my error. After reading about UEFI, I see
that it needs a separate /boot/efi partition. I have room on the disk
at the start before the first /boot partition, but I didn't create that
partition during custom configuration. That could have been why it
refused to install to the partitions I created as UEFI.
Again, I'm struck by how clumsy this all seems. I must be missing
something. People wouldn't have invested all the effort they did in
these new methods if they didn't solve some problem.
