Yep. Except gdm still uses Wayland by default... it's just the gnome session then from there is default X11 (but you can choose Gnome wayland to stay in wayland).

Why not just limit your testing to the use of native wayland applications? I'm not sure what the goal is because xwayland is probably going to be depended on for years.

You can choose it at login time (specifically when entering your password in the "gear" icon under and to the right of the password field). This is not a persistent setting on live images unless you have a persistent overlay setup.
