The quickest would be to encrypt the drives from the beginning. When you want to discard the drives, you just need to wipe the LUKS header. With the key wiped out, the rest of the drive is just random bits.

Undoubtedly, *if* the drive was previously encrypted. Nothing the OP has says indicates this is the case, and encrypting it now is not going to be faster than trashing it.
