Let me know if it makes more sense to use ddrescue instead of `btrfs restore`.

It's up to you. Both methods make a copy. Thats whats important.

ddrescue will take longer and needs more space than just pulling out files with btrfs restore. But if you're already familiar with ddrescue, that's an advantage.
