You might try leafpad, from Xfce for a GUI editor.
Better. Same 100% CPU thing, doing something but I can't tell what, it is responsive while this is going on though, and no screen redraw problems like gedit.
Well then, try using something like nano in a text console. That gives you a full screen editor but no GUI. If that works, it's probably your DE; if not, it may be related to some sort of memory leak.
