The thing is that I no longer have the freedom to do what I want when installing (unless I've missed something crucial). If there is an advantage in using other partition schemes is another question.
They're actually quite related. The installer UI is intended* to present meaningful decisions, and make those choices easier and more straightforward by not necessarily offering all the possibilities when the result is effectively the same.
You can, however, pre-partition your system and use those partitions, or use kickstart to partition very flexibly.
