I'm not one of the developers and this is a totally unprompted recommendation, but, if you haven't tried it, I can't say enough good things about the Claws Mail client. It's an extended version of Sylpheed, I think, and is the only graphical (Gtk) mail program I've found that comes anywhere near to Mutt.
Unlike Evolution, it does only one thing, but it does that one thing--mail handling--very, very well indeed. Plugins are available to handle PGP in all its various permutations; to read PDFs inline; there's even a Perl plugin that allows you to script actions that can't be configured natively, though what those may be I can't imagine.
If you're looking for a mail client that can chew through a large number of mailing lists, do check it out: threaded indexing (à la Mutt), handles quote levels in contrasting colors (like Mutt), and is set up for easy pre- and post-processing of mails. It's also fast--much faster than Evolution. (I have to admit that even as a Nat and Miguel fanboi.)
I still use Mutt to read mail on the server, but when I'm on my Fedora box, Claws Mail is just so good I just had to share.
(Be sure to get the claws-mail-plugins RPM if you try it out.)

This can be done by editing the account properties - you're not limited to one account. Accounts can be used for receiving and/or sending. Signature, custom headers, X-Face or Face, default folders (sent, drafts, inbox, etc.).
Folders also have properties that can override some settings (handy for mailing lists or groups for instance).
Give it a quick look, or I'll have to re-write the manual and the GUI here ;-).
- macros

For now it's not possible to attach some editing preferences to a contact from address book (I personally workaround this by using compose/reply/fwd templates with calls to external scripts), but in each folder prefs, you can set the account to use there.

Not that way. Following you precise needs, that could be done w/ folder's processing rules, but I afraid this won't cover all your needs.
There's maybe a way to cheat anyway.. you can create an action that invokes a filtering rule w/ the selected messagtes. Set that filtering rule to do all what you need (call the script, delete or move), and make that rule associated to a specific dummy account that would not be used at incorporation or for composing.

Probably the one thing that sways my opinion about a client is how good or bad it quotes. The top things that spring to mind being:
I like being able to highlight something, and reply to that message, and only what was highlighted gets quoted.
I like clients that quote verbatim, until I re-arrange paragraphs.

Not exactly but close: You can do complex filter matches and use those to do global filtering and apply actions or to do per folder filtering and apply actions. AFAIK right now you can't do per account filtering rules neatly. There is also a "throw this through a script" filter command so you can handle pretty much decision.

The IMAP support in claws is pretty good.

I am curious . I have been looking for an alternative to thunderbird, but there is a feature in thunderbird that I have not been able to satisfactorily reproduce in any other email client "Grouped By Sort G". For those not familiar with this it groups email in the mail box into mail received since midnight, the previous day, the previous week the last two weeks and older mail. Each group is collapsible. You can fudge something like this in Evolution with virtual folders and filters - but it is no where near as convenient. Does claws provide this feature?

In several last versions I did check it with no success to send/download. For the latest 2.9.1 - not, just it is expansive for me to test over Internet (so I have little Internet).

Claws is indeed a great mail client. The thing it really lacks though is flexible message tagging which thunderbird 2 will have. i.e. the ability to define your own tags, and tag messages with multiple tags (which can then form the basis of searches and virtual filters). That's my #1 wish!

One other thing: it would be nice to have an automatic domain-filling option. For instance, if your account is @xxx.xxxx, then if i type recipient, it should automatically get sent to recipient@xxx.xxxx. I did ask for this, and was rebuffed.

Text has its place for sure but (some of) the world needs more than just text mail these days - the reality of today (cf 1980) is that networks are fast and inthe business world formatted/structured mail is a de facto necessity - and html is the only game in town. Time to move on -
claws seems like kmail only less so ... not compelling from my perspective but if its active may well end up nicer and more functional than kmail which seems to have reached stasis - claws is just not there yet. kmail is terrific for organizing and reading and filtering - just not replying and composing anything apart from simple text.
For business there's only thunderbird and evo as far as I can tell and each has its pros and cons. Sadly the killer email app is not yet upon us (me anyway!).

I wouldn't mind, so much, if only it was used sensibly. But it rarely is. You don't have just <p>what the person said</p>, but masses of divs, brs, pseudo-MS-centric-CSS gumph, etc. And it gets even worse when you quote back.
It's no-wonder MS favours the reply above and quote below technique, it saves them the headache of rewriting the HTML.

Unlike Evolution, it does only one thing, but it does that one thing--mail handling--very, very well indeed. If you're looking for a mail client that can chew through a large number of mailing lists, do check it out: threaded indexing (à la Mutt), handles quote levels in contrasting colors (like Mutt), and is set up for easy pre- and post-processing of mails. It's also fast--much faster than Evolution. (I have to admit that even as a Nat and Miguel fanboi.)
I still use Mutt to read mail on the server, but when I'm on my Fedora box, Claws Mail is just so good I just had to share.

After reading this thread last night, I wanted to try Slypheed-Claws. I'm a long-time Thunderbird chat, so I was a bit hesitant.
I didn't visit the site to see that there are little applets to do what I did manually (import mail, rules, & address book) but, doing all that manually wasn't an issue. In fact, importing the mail was actually pleasant!
While I still love the overall look and feel of T-Bird, I equally love the speed that SC has over T-Bird.
I have not reviewed the Win32 version - but for now, T-Bird works on the Windows boxen at work.
For now - I am a convert (until I find that SC just can't do what I want it to).
