My translators are dutch, french, germans, italians, and spanish. I am located in Italy but my locale is en-US. Where do I find a list of CHARSET names?

Use UTF-8 for everything is a good simple rule. That is the multi-byte encoding things like Fedora use which can represent everything in the ISO catalogue of glyphs.
