I used to run "yum --downloadonly update" in cron at night so I would have the cache already built when I was ready to actually do the install later.
I don't see anything like --downloadonly in dnf.
Am I missing something, or is there no way to do that?

Sounds like you want DNF Automatic, configured to download but not apply. See http://dnf.readthedocs.org/en/latest/automatic.html
