I can pretty much guarantee that anything you find will be a disappointment to you. Good text-to-speech is currently a largely unsolved problem. Existing software requires extensive training and is still not particularly accurate. In most cases it's more efficient to listen to dictation and type the text yourself.

Thanks for the response. Your note is appropriate with what I am finding. Do you know if there is a project working on speech to text. I would like to monitor there work and help if I can.

(Note: Ignore the outdated instructions saying to get the proprietary Java at java.sun.com, the java-1.6.0-openjdk packages which ship with Fedora should be perfectly fine.)
