You may want to look at available documentation to try to address your questions. Searching for "mate desktop documentation" brings up a range of things. While there may be some tweaks in the Fedora implementation, the "Ubuntu MATE Guide" looks fairly comprehensive and appears to have been updated recently.

Found it! My notes:
How to add items to MATE's desktop right click context menu:
Mate's desktop Right Click context menu contains and entry called "Scrips". It is about half way down.
This "Scripts" entry refers to the ~/.config/caja/scripts directory. Just place a bash script or whatever in there and it will appear in the scripts entry.
