Grandma will not make a choice and boot into our default live media
which is 32 bit GNOME.

I think this is already too late: People want the full experience of a
desktop, this includes the display manager: GDM for GNOME, KDM for KDE
and LXDM for LXDE.
What they see needs to match what they get when they install.
