Let's reconsider some more applications installed by default

Yeah, from my talks with the Evolution devs, a redesign is out of the
question. They're opposed to the app menu too, but I think they will
add it if we make it a requirement to be installed by default. (Which I
very much wish us to do.) A minimal menu (New
Window/Preferences/Help/About/Quit) would be just fine. We just want at
least those basics to be in a consistent location for every
application.
