Currently there's no extra package for APC, but I'll submit it for
review (i am a extras contributor already), for the time being you could
use the package I've created just now for this purpose:

http://develop.intermax.nl/php-apc/

grab the src.rpm and :
# rpmbuild --rebuild --clean php-apc-5.1.4_3.0.10-1.src.rpm

and install the resulting rpm, restart apache, and you should be good to
go

(i've included a sane default configuration in it which will be put
in /etc/php.d/apc.ini)
