Actually in kickstart scripts you can specify "text" which will run the
installation in text mode and also make runlevel 3 the default. It's
pretty useless though since if you do "semi-interactive" kickstarts
(manual partitioning, everything else automatic for example) you want to
install in graphical mode because text mode lacks some features but you
still often want to boot into runlevel 3, so you end up specifying
"graphical" instead of "text" and sed:ing inittab in the kickstart %post
script.
