Here is what I have thus far. Please provide me some feedback on
things like "Too much! Not enough! Grooossssss!" or etc.

Breakfast: $497.35 (this is for one breakfast - if we do it both days,
that would be X2 price.)

7 gallons coffee
1 gallon hot tea
3 gallons orange juice
2 gallons iced tea
6 dozen bagels & cream cheese, assorted
5 dozen danishes
4 loaves breakfast bread (12 slices/loaf)
4 dozen muffins
5 seasonal fruit trays (10 servings/tray)


Lunch: (180 meals) - $1,571.95

Classic Box Lunch - Served with Seasonal Fruit, Pasta Salad, Chips, Cookie

40each  Chunky Dijon Chicken Salad on 12 Grain Bread
15each  Balsamic Marinated Vegetable Wrap with Fresh Mozzarella & Arugula
15each **VEGAN Balsamic Marinated Vegetable Wrap ** no cheese
40each  Traditional Turkey Club with Bacon, Lettuce and Tomato on 12 Grain Bread
40each  Classic Italian Sub with Ham, Pepperoni, Salami and Oil &
Vinegar on a Whole Wheat Sub

Classic Box Salads, served with Roll, Seasonal Fruit, Chips, Cookie
	
20each  Traditional Caesar Salad with Grilled Chicken, Shredded
Parmesan Cheese and Seasoned Croutons
5each  Traditional Garden Tofu Salad with Fresh Iceberg and Romaine
Lettuce, Sesame Marinated Tofu, Hard Boiled Eggs
5each  Traditional Garden Tofu VEGAN Salad with Fresh Iceberg and
Romaine Lettuce, Sesame Marinated Tofu, and Balsamic Vinaigrette
Dressing ***NO EGG**

Dinner: This one is very preliminary - she had a horrible typo (Labor
of 100 attendants instead of two, resulting in $10k rather than $200).
Southwestern Fajita Bar, 200 people: Chicken Fajita, Beef Fajita,
Southwest Roasted Vegetables, Grated Monterey & Cheddar Cheese,
Grilled Onions & Peppers, Refried Beans, Spanish Rice, Sliced Black
Olives, Chopped Scallions, Jalapeno Poppers, Cinnamon Crispas
My Guesstimate (NOT a quote) - $4,014 (including tax and labor and whatnot)

My only issue is that the dinner isn't entirely "vegan friendly" - I
am working with her ot see if we can have 25-30 entrees brought that
are more vegetarian/vegan, and then we would take 25 off of what we
are ordering.

I realize that these numbers are above the cut-off of 140 people.  I'd
like to try and accommodate as many folks as we can with food,
particularly keeping in mind that we should probably do our best to
feed AT LEAST the folks from ASU faculty who have not signed up on the
wiki, in addition to the 140-people cutoff, and I'd hope that we have
a decent number of those folks coming to dinner/lunch with us and
talking and absorbing FLOSS-y things to take back to their students
and teach :)

Again - feedback welcomed. Lunch was an "optional - let's look into
it" thing, so keep that in mind :) I should hear back more from her on
Monday wrt the dinner quote.
