You can forward incoming emails using .forward files and for reporting
use any of the sendmail log analyzers:

http://sourceforge.net/projects/sa-report/
http://www.klake.org/sma/
http://www.enderunix.org/isoqlog/

Can also use this milter for BCC:

http://www.milter.info/sendmail/milter-bcc/
