The problem is that (if I recall correctly) the jetty UID and GID have changed in the past. If someone tried to upgrade an old jetty, UID and GID would be left unchanged. Those old UID and GID triggered a bug in gdm causing jetty user to be listed on gdm login screen [1]. Although removing and recreating jetty user and group is not absolutely required, it shouldn't hurt either.
