just use kmenuedit and change the Command from e.g. "openoffice.org -writer %U"
to
bash -c 'GTK2_RC_FILES=/usr/share/themes/Clearlooks/gtk-2.0/gtkrc openoffice.org
-writer %U'

now OOo will use Clearlooks independently from your default gtk theme

Another possibility is to make a copy of your default gtkrc file for example:
/usr/local/share/themes/kde44-oxygen-molecule/gtk-2.0/gtkrc.openoffice.org

and change the colors inside gtkrc.openoffice.org how you like and point
GTK2_RC_FILES for OOo to this file
