s/GNOME/LXDE/ as alternate desktop?

If you are seeking prebuilt solutions outside the GNOME influence, you
could also consider the LXDE build of DebXO, and the Tiny Core Linux
builds being discussed on devel at lists.laptop.org.

If you'd like to contribute to an LXDE based Fedora build, then you
could fork or augment olpc-os-builder which is currently used to produce
OLPC XO builds.

Your configuration changes and package choices may be useful to others,
but only if they can be easily reproduced for others to deploy.
