Bad : you need to define BuildArch : noarch

rpmlint on the rpm gives

E: script-without-shellbang
/usr/share/doc/jokosher-0.1/userguide/jokosheruserguide.de.html

rpmlint on the debuginfo gives

E: empty-debuginfo-package

I'm currently running mock over the package.

You need to fix the above problems before you go any further as they're blockers.
