If all subpackages are built from the same .src.rpm, how is this a
maintainability win at all?

This isn't like the modularization of X, where it became independent
.src.rpm packages that could be updated individually.

The metadata hit would be extreme, and with a single .src.rpm does not
improve maintainability in the way that matters most?
