Confused about evolution 2 Mimetype settings....

Where does one set mime types for evolution 2.0...... All my MSWord
attachments can only be "Save As...." though I have an OpenOffce desktop
entry in /usr/share/applications (it shows up in the main menu)......
Also, evolution doesnt give me any options for adding mime types..... I
have done about 20 Fedora 3 installs now and it is the same every
time.....

Clues, anyone?
