It's the difference between a restaurant with a menu and a buffet or dim
sum.

At a restaurant with service you can read the menu, and by ordering from
the menu obtain any item quickly, but it's not the same as having a wide
selection sitting on your table (installed on your desktop?) where you
can sniff and see and poke and say, "this one looks interesting, I'll
try it".

Once you know about jiaozi, you can order from the menu next time :-)
