I haven't tried it, but some Googling suggests that SPICE can do this:

The qxl option:
-qxl <num> [,ram=megs]
Set 'num' qxl display devices, each with RAM size of 'megs' MB (current
default=64MB)

See http://spice-space.org/docs/spice_user_manual.pdf . I am not sure if
virt-manager has the ability to configure this graphically, but it's
definitely supposed to work with direct qemu invocation.
