yum remove gnome-packagekit, should remove the gui parts.

A hack to disable the backend is to edit

/etc/PackageKit/PackageKit.conf

and change

DefaultBackend=yum

to

DefaultBackend=nobackend

Then you get PackageKit out of you face.
