I wrote a small script to backup 3 files encrypt them then send them via
ftp to my ISP then delete the tar files off of the local hard drive. 
That gives me a backup with the file name with the system date in the
file name so it won't over write it when I ftp it.  To change the name I
just used the copy command (cp) so you can put it anywhere you want, but
it will give you separate file for every day you run it.  You can tell
the script to remove (rm) files older than X days if you don't want to
keep them ( I don't know how, but I think you can do that )  If you want
