Confused Newbie: Postfix + Imap nested folders

Hi
I am confused and the more documentation I read I get more confused.
I have a two PC system, locally networked, no DNS plus a dial-up
internet connection.
One PC is a Win2K and the other has Fedora FC1 with
2.4.22-1.2174.nptl kernel.
I installed Postfix 2.0.11 and Imap 2002 on the Fedora PC to be
able to read my e-mail from Microsoft Outlook or Linux depending on
which machine i was using at the time.
Both postfix and imap seem to work fine, nevertheless I am still
confused regarding the following items.
1. How can I have nested (or sub-folders, or whatever way it is called)
If I am working on Microsoft Outlook, I only see the Inbox box normally
If I am working on Ximian, I see the Local folders and the Imap mailbox
for
my user.
I want to creat sub-folders to classify my e-mail. I know I could create
rules
and transfer the e-mail to local folders, but that kind of defeats the
purpose
of having ONE e-mail repository whether I am working on Outlook or
Evolution.
Also, keeping in sync the two filter (outlook and evolution) lists will
not be
something I look forward to.
My mailbox is on /var/mail/username
2. How can I control what gets transmitted and displayed at Microsoft
Outlook for the
"Folders".
If I go to Tools->IMAP Folders in Microsoft Outlook, and uncheck the
option that
says "check to see only subscribed folders, and press the query bottom, I
get to see
all the contents of /home/username (all folders and files). Granted, I
only see my folders,
but it is disconcerting to be able to see up to the hidden folders
without having
formally granted access.
I appreciate whatever lights you can shed on these situation.
