If you are using a script to do the build, (I highly recommend it as 
it helps to prevent the "oh, damn, I forgot" mistakes) and have the 
version number as a $VAR in that, and use it in the scripts 
operations, then the only other thing you need to do is make sure 
that your Makefile also has the exact same version coded into its 
Extra_Version and you should be fine.  Then all you have to do is 
edit your /boot/grub/grub.conf to use the new name you've assigned.  
I do it here all the time.
