configuring FC as a headless server

I had to drag out my monitor the other day due to reasons I explain below.

         I keep the keyboard and mouse plugged-in and stuffed on the floor behind the machine.
         so I don't know if this is necessary.

        I don't do this.  I don't think it is necessary personally.

Some thoughts based on recent experience:
 - UPS!
 - make sure the UPS is not 7 years old with a dead battery. i.e,  regular maintenance and monitoring
 - use journaled filesystems.  that way you'll be less likely to need to drag out the Keyboard/Video/Mouse just
    to perform fsck when the system looses power (in my case I had bad UPS and a power outage.. but someone
   could kick-out the plug by mistake too)
