mail confusion

Evolution (and lots of other MUA's) allow you to specify your
own 'From:' address.  Anything that supports multiple accounts
would have to.  Pine probably has a way to do it but I'm
not sure about 'mail' which might always assume the local
host is your return address.  If you can get the MUA to
use your correct address in the first place, the transport
won't have to correct it for you.
