What backup method(s) do you use?

Wow..

We also use a dedicated box with a Perl script and rsync/ssh, but we use
250G external USB2 disks encrypted with cryptoloop to allow secure offsite
backups. USB drives are so cheap nowadays that they are a reasonable
alternative to expensive tape drives, which never store as much as they
claim to anyway.
