Yes, it will try to expand the '*'.
You can make the above command fail deliberately, of course.
Try this:
$ touch -- --exclude=dovecot-xyzzy
$ yum --exclude=dovecot* update
This will try to update dovecot, since the shell metacharacter will indeed
be expanded.
To remove the weirdly named file, do:
$ rm -- --exclude=dovecot-xyzzy
--
