Left click on your name in the upper right corner of the screen.
Chose 'Systems Settings'
Chose 'System Info'
Chose 'Graphics'
There you have a toggle for 'Forced Fallback Mode'

To add things to the panels, press and hold Alt, and then right click.

It seem to be quite close to what you get in Gnome2.
