For the first we dont have any graphical tools to manage our application 
stack secondly we should not be delivering products that allow for 
larger attack surface on servers then need be.

Name the desktop applications that exist to manage various server 
applications?

Let's see if you can count to more then let's keep that number very low 
5 - 10 maybe 20 ( out of 500 550 server applications or server 
application stack )

In reality if the user is not comfortable manage-nig headless server 
he's not comfortable in the terminal which in turn excludes the entire 
desktop.
