What IMAP server are you running and how is it configured. You -should- 
just be able to see a synchronized set of folders through IMAP, creating 
new ones as desired).

When you uncheck 'see only subscribed folders' in Outlook, that should 
get all of your IMAP folders. The fact that you see your home directory 
instead sounds like there's a misconfiguration of your IMAP server.

With thunderbird/mozilla mail you create new folders by right clicking 
your account or inbox and selecting 'new folder'... I don't use Evolution.
