They recommend 8G RAM minimum, and ECC. Most sites where VM images are used
on ZFS recommend SSD for ZIL and L2 ARC to help make up for the IOPS
limitation. So don't make the server too little.

Also note that growing a pool isn't as easy with ZFS as with either mdadm
or LVM. You either have to create a new raid6 vdev (at least 4 drives) to
add to the pool, or you have to replace existing drives with larger ones,
resilvering between each replacement.

I'd do some research before committing to this. It's way more involved than
the other suggestions. That doesn't necessarily mean it's a bad idea, just
that it'll be a pet needing a lot of attention.
