From memory:

grub-efi-install will probably install something like grubx64.efi in /boot/efi/EFI/grub 
So you keep the original grub.efi as a backup.
Config goes under /boot/grub2-efi/
grub2-efi-mkconfig -o /boot/grub2-efi/grub.cfg

This assumes you have a vfat partition with the /efI/EFI mounted under /boot which it seems you have.

I have used this myself on a mac booted in EFI mode
