Some RHEL 6 packages will only be built/supported on particular archs.
The ones I know about:
kvm etc x86_64
ocaml, ocaml-* %{ix86}, x86_64
libguestfs, virt-v2v etc x86_64
Will it be possible to build these in EPEL 6 on the other
architectures?

Yes it will be possible. it will need special coordination to make sure that
we only ship it on other arches. and might need some work on the koji side.
